Chipotle

Lance has been missing Chipotle ever since we moved to Texas. There is a place similar to Chipotle in Lubbock but we do not think it is as good. So last weekend, we once again attempted to make Chipotle at home. I must say it was a pretty good success except the salsa needed something more. Lance found this recipe online for Chipotle's hot salsa.


1/2 pound Tomatillo, cut into strips
2 teaspoons Chipotle chiles, finely chopped
1/4 cup onion, finely chopped
2 tablespoons cilantro, finely chopped
2 teaspoons fresh lemon juice
1/2 teaspoon lemon zest
1 teaspoon fresh lime juice
1/4 teaspoon salt
1/4 teaspoon ground pepper


 I had never cooked with tomatillo's before. They were like sticky tomatoes with an outside skin layer. I assumed that you peel that layer off but I guess I don't know that for sure.


I had never cooked with these guys before either. They made my hands red.

You basically chop everything, put it in the blender, and blend. After it's done I would recommend tasting it to see if it needs anything else. We ended up messing with it for awhile.

We always try making Chipotle at home, too! Even though we have one near by...lol. Glad to see you tried the tomatillos--I've always wanted to try them but I'm not a fan of their price tag!

Jen- It probably looks legit because Lance's burrito is too full to close..like normal. Haha :)

Bria- In my opinion making salsa with tomatoes are just as good or better than with tomatillos. I think I got them at a decent price because of my location! Happy Wedding Week!! :)
