Good Food

I've been into cooking new things lately. I found this recipe in an old cook book, it looked easy, and I had everything to make it. It was good!


Layered Mexican Casserole:

1 lb. ground beef
1 onion, chopped
1 T. chili powder
4-6 tortillas
1 can beans
16 oz. shredded monterey jack cheese
1 can Rotel
1 can cream of chicken soup

Preheat oven 350 degrees. Brown hamburger with onion and chili powder. Spread mixture in large baking dish. Top with tortillas. Mix beans with remaining beef mixture and spread over tortillas. Layer cheese, rotel, cheese and top with soup. Bake for about an hour.

Wow it all looks delicious. The peppers even look good, even though I would never eat them ;)
